Hainanese Chicken Rice (Shellfish-Free)

Ingredients

  • 1 whole (about 3 lbs) Chicken
  • 2 cups Long-grain rice
  • 4 cups Chicken broth (low sodium)
  • 4 slices Ginger
  • 4 cloves Garlic
  • 2 stalks Scallions
  • 1 tablespoon Sesame oil
  • 2 tablespoons Soy sauce (low sodium)
  • 1 medium Cucumber

Instructions

  1. 1Rinse the chicken thoroughly. In a large pot, bring water to a boil. Gently place the chicken in the boiling water and reduce heat to a simmer. Cook for about 40-45 minutes, or until the chicken is cooked through. Remove chicken and let it cool.
  2. 2While the chicken is cooking, prepare the rice. Rinse the rice until the water runs clear. In a pot, combine the rice, chicken broth, ginger slices, and garlic cloves. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  3. 3While rice cooks, make the ginger-garlic sauce by finely chopping ginger and garlic then mixing with sesame oil and low-sodium soy sauce.
  4. 4Slice the cooled chicken and serve it with the fragrant rice, ginger-garlic sauce, and sliced cucumbers and scallions.
