Hainanese Chicken Rice (Nut-Free)

Ingredients

  • 1 whole (3-4 lb) Chicken
  • 12 cups Water
  • 4 slices Ginger
  • 2 stalks Green Onions
  • 2 tsp Salt
  • 2 cups Long-Grain Rice
  • 4 cups Chicken Broth
  • 4 cloves Garlic
  • 1 tbsp Sesame Oil
  • 2 tbsp Soy Sauce
  • 1 medium Cucumber

Instructions

  1. 1Rinse chicken thoroughly. Place chicken in a large pot and cover with water. Add ginger, green onions, and salt.
  2. 2Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until chicken is cooked through.
  3. 3Remove chicken from the pot and let cool slightly. Reserve 4 cups of chicken broth.
  4. 4In a separate pot, sauté minced garlic in sesame oil until fragrant. Add rice and cook for 1 minute.
  5. 5Pour in the reserved chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  6. 6Chop or shred the chicken. Serve chicken over rice, with sliced cucumber and a drizzle of soy sauce.
