Ingredients

  • 6 large Eggs
  • 1/4 cup Carrot, finely diced
  • 2 tbsp Green onion, finely chopped
  • 1/4 cup Onion, finely diced
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Vegetable oil

Instructions

  1. 1In a bowl, whisk together the eggs, diced carrot, green onion, salt, and black pepper.
  2. 2Heat a non-stick skillet over medium-low heat. Add a small amount of vegetable oil.
  3. 3Pour a thin layer of the egg mixture into the skillet, just enough to cover the bottom.
  4. 4Once the egg is partially set but still slightly wet on top, gently roll the omelette from one side to the other using a spatula.
  5. 5Push the rolled omelette to one side of the pan, and pour another thin layer of egg mixture into the empty space.
  6. 6Lift the rolled omelette slightly to let the new egg mixture flow underneath. Once the new layer is partially set, continue rolling the omelette.
  7. 7Repeat the process until all the egg mixture is used up. Cook the rolled omelette until golden brown on all sides.
  8. 8Remove the rolled omelette from the skillet and let it cool slightly. Slice into bite-sized pieces and serve.
