Gundruk Sadeko (Fermented Greens Salad)

Ingredients

  • 1 cup Gundruk (fermented mustard greens)
  • 1/4 cup Red Onion
  • 1 small Green Chilies
  • 1 clove Garlic
  • 2 tablespoons Cilantro
  • 1 tablespoon Mustard Oil
  • 1/4 teaspoon Turmeric Powder
  • 1/4 teaspoon Salt

Instructions

  1. 1If the 1 cup of Gundruk (fermented mustard greens) feels very dry, place it in a bowl and soak it in warm water for 5 minutes to soften. Then, squeeze out all the excess water.
  2. 2Finely chop the 1/4 cup Red Onion, 1 small Green Chilies, 1 clove Garlic, and 2 tablespoons Cilantro. Place these chopped ingredients into a medium-sized bowl.
  3. 3Add the prepared 1 cup of Gundruk (fermented mustard greens) to the bowl with the chopped vegetables.
  4. 4Place a small saucepan over medium heat. Add the 1 tablespoon of Mustard Oil and heat it until it just begins to smoke slightly, which should take about 1-2 minutes. Carefully remove the pan from the heat and let the oil cool for 3-5 minutes until the smoking stops.
  5. 5Pour the slightly cooled 1 tablespoon of Mustard Oil over the gundruk and vegetable mixture in the bowl. Add the 1/4 teaspoon Turmeric Powder and 1/4 teaspoon Salt.
  6. 6Mix all the ingredients in the bowl thoroughly until everything is well combined. The salad is ready to serve immediately.
