Groundnut Soup with Chicken and Fufu (Egg-Free)

Ingredients

  • 1.5 lbs Chicken pieces
  • 1 cup Groundnut paste (peanut butter)
  • 1 large Onion
  • 3 medium Tomatoes
  • 2 tablespoons Ginger
  • 3 cloves Garlic
  • 1/2 small Scotch bonnet pepper
  • 6 cups Chicken broth
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 package Fufu (yam or plantain)

Instructions

  1. 1In a large heavy-bottomed pot, combine the 1.5 lbs chicken pieces with the 1 teaspoon of salt and the 1/2 teaspoon of black pepper, tossing to coat evenly. Heat the pot over medium-high heat (400°F/200°C); add the seasoned chicken pieces and brown them on all sides for 5-7 minutes, then remove the chicken from the pot and set it aside on a plate.
  2. 2Reduce the heat to medium (350°F/175°C). Add the 1 large onion, cut into 1/2-inch dice, to the pot and cook, stirring occasionally, for 5-7 minutes until softened and translucent. Then, add the 3 medium tomatoes, cut into 1/2-inch dice, the 2 tablespoons of grated ginger, and the 3 cloves of minced garlic; cook, stirring, for 8-10 minutes until the tomatoes have broken down and the mixture is fragrant.
  3. 3Stir the 1 cup of groundnut paste into the pot until it is well combined with the tomato and onion mixture. Gradually pour in the 6 cups of chicken broth, stirring constantly to ensure the groundnut paste dissolves smoothly and no lumps remain.
  4. 4Return the browned 1.5 lbs chicken pieces to the pot. Add the minced 1/2 small scotch bonnet pepper and stir all ingredients together.
  5. 5Bring the soup to a boil over medium-high heat (400°F/200°C). Once boiling, reduce the heat to low (200°F/95°C), cover the pot, and let it simmer for 45-50 minutes, stirring occasionally to prevent sticking; the soup is ready when the chicken is tender and the soup has thickened.
  6. 6While the soup simmers, prepare the 1 package of fufu: place the 1 package of fufu in a microwave-safe bowl and heat on high for 2-3 minutes, or until it is warmed through and pliable. Alternatively, steam the 1 package of fufu in a steamer basket over boiling water for 5-7 minutes until warmed and pliable.
  7. 7Serve the hot groundnut soup immediately with the prepared fufu on the side.
