Ingredients

  • 2 Ripe Plantains
  • 2 tbsp Peanut Butter
  • 1 tbsp Water
  • 1 tsp Lime Juice
  • 1 tsp Agave Nectar
  • 1 Pinch of Salt

Instructions

  1. 1Carefully peel the 2 ripe plantains. Slice each plantain lengthwise into two equal halves, resulting in 4 plantain halves.
  2. 2Heat a grill or a grill pan over medium heat until it reaches approximately 375°F (190°C).
  3. 3Place the 4 plantain halves directly onto the hot grill. Cook for 5 to 7 minutes on one side until golden brown, then flip them over using tongs and cook for another 5 to 7 minutes on the second side until they are also golden brown and feel tender when gently pressed with a spatula.
  4. 4While the plantains are cooking, measure the 2 tbsp of peanut butter, 1 tbsp of water, 1 tsp of lime juice, 1 tsp of agave nectar, and 1 pinch of salt into a small bowl.
  5. 5Whisk these ingredients together vigorously until the peanut sauce is completely smooth. If the sauce appears too thick to drizzle, add an additional 1/2 teaspoon of water at a time, whisking after each addition, until it reaches a smooth, pourable consistency.
  6. 6Carefully transfer the grilled plantains to serving plates. Immediately drizzle all of the prepared peanut sauce evenly over the warm plantains and serve.
