Ingredients

  • 1 whole Pineapple
  • 1 can Coconut Cream
  • 2 tbsp Powdered Sugar
  • 1 tsp Lime Zest

Instructions

  1. 1Preheat your grill to medium heat, which is about 350°F to 400°F (175°C to 200°C).
  2. 2Prepare the 1 whole Pineapple by peeling it, removing the core, and slicing it into 1-inch thick rings.
  3. 3Place the pineapple rings on the preheated grill. Cook for 3 to 4 minutes per side. You'll know they are ready when you see distinct grill marks and the pineapple feels slightly soft when gently pressed.
  4. 4While the pineapple is grilling, place the can of Coconut Cream in the refrigerator to chill. This helps the cream separate and thicken.
  5. 5Once the coconut cream is chilled, carefully open the can. Scoop out only the thick, solid cream that has risen to the top, leaving the watery liquid behind. Place this thick cream into a chilled bowl.
  6. 6Add the 2 tbsp of Powdered Sugar and the 1 tsp of Lime Zest to the thick coconut cream. Beat with a whisk or electric mixer until the mixture is light and fluffy, resembling whipped cream.
  7. 7Arrange the grilled pineapple slices on a serving plate. Spoon the prepared coconut whipped cream generously over the warm pineapple slices. Serve immediately.
