Ingredients

  • 1 whole Fresh pineapple, cut into chunks
  • 1/4 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Ginger, grated
  • 1 clove Garlic, minced
  • 1 teaspoon Cornstarch
  • 1 tablespoon Water
  • 2 tablespoons Fresh mint leaves, chopped

Instructions

  1. 1Prepare teriyaki glaze: In a small saucepan, combine soy sauce, brown sugar, rice vinegar, ginger, and garlic. Bring to a simmer over medium heat.
  2. 2In a small bowl, whisk together cornstarch and water. Add to the saucepan and cook, stirring constantly, until glaze thickens slightly.
  3. 3Remove from heat and set aside to cool slightly.
  4. 4Thread pineapple chunks onto skewers.
  5. 5Preheat grill to medium heat.
  6. 6Grill pineapple skewers for 2-3 minutes per side, or until grill marks appear and pineapple is heated through. Brush with teriyaki glaze during the last minute of grilling.
