Grilled Halloumi with Watermelon and Mint

Ingredients

  • 8 oz Halloumi Cheese
  • 4 cups Watermelon (cubed)
  • 1/4 cup Fresh Mint Leaves
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice

Instructions

  1. 1Place the 8 oz of Halloumi Cheese on a clean cutting board. Use a sharp knife to cut the halloumi into 1/2-inch thick slices.
  2. 2Place a grill pan or large skillet over medium-high heat. Let it heat up for 2-3 minutes until it is hot.
  3. 3Add the 1 tablespoon of Olive Oil to the hot grill pan. Immediately place the sliced halloumi cheese in the pan. Cook for 2-3 minutes per side, until the halloumi is golden brown and slightly softened. The cheese should have grill marks if using a grill pan.
  4. 4While the halloumi is cooking, arrange the 4 cups of cubed Watermelon on a serving platter.
  5. 5Once the halloumi is cooked, carefully remove it from the pan and place it on top of the watermelon cubes on the platter.
  6. 6In a small bowl, whisk together the 1 tablespoon of Lemon Juice.
  7. 7Drizzle the lemon juice mixture evenly over the grilled halloumi and watermelon.
  8. 8Garnish the dish with the 1/4 cup of Fresh Mint Leaves just before serving.
