Ingredients

  • 8 oz Halloumi Cheese
  • 4 cups Watermelon
  • 1/4 cup Fresh Mint Leaves
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Cut the 8 oz of halloumi cheese into 1-inch cubes.
  2. 2Cut the 4 cups of watermelon into 1-inch cubes.
  3. 3Thread the halloumi cubes and watermelon cubes onto skewers, alternating between the cheese and the watermelon. Aim to put about 3-4 pieces of each on each skewer.
  4. 4Place the skewers on a clean grill or grill pan. Brush the skewers evenly with the 1 tablespoon of olive oil and sprinkle with the 1/4 teaspoon of black pepper.
  5. 5Grill the skewers over medium heat, which is about 350°F to 400°F (175°C to 200°C). Cook for 2 to 3 minutes per side, until the halloumi cheese is golden brown and slightly softened. You will see it get a nice grill mark and become a little squishy to the touch.
  6. 6Remove the skewers from the grill. Immediately drizzle them with the 1 tablespoon of lemon juice and scatter the 1/4 cup of fresh mint leaves over the top.
  7. 7Serve the skewers immediately while they are warm.
