Ingredients

  • 8 ounces Halloumi cheese
  • 2 cups Watermelon
  • 0.25 cup Fresh mint leaves
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Black pepper

Instructions

  1. 1Cut the 8 ounces of Halloumi cheese into 1-inch cubes. Then, cut the 2 cups of Watermelon into 1-inch cubes.
  2. 2Carefully thread the 1-inch cubes of Halloumi and the 1-inch cubes of Watermelon alternately onto skewers.
  3. 3Brush the assembled skewers evenly with the 1 tablespoon of Olive oil. Preheat a grill to medium heat, which is approximately 350-375°F (175-190°C).
  4. 4Place the skewers on the preheated grill. Grill for 2 to 3 minutes per side, turning carefully, until the Halloumi cheese is golden brown and slightly softened. This will take a total of 8 to 12 minutes.
  5. 5While the skewers are grilling or immediately after, finely chop the 0.25 cup of Fresh mint leaves. Once grilled, transfer the skewers to a serving platter.
  6. 6Drizzle the 1 tablespoon of Lemon juice over the skewers. Sprinkle with the chopped 0.25 cup of Fresh mint leaves and the 0.25 teaspoon of Black pepper. Serve immediately.
