Greek Salad with Grilled Halloumi (Gluten-Free)

Ingredients

  • 1 medium Cucumber
  • 2 medium Tomato
  • 1/2 medium Red onion
  • 1/2 cup Kalamata olives
  • 1/2 medium Green bell pepper
  • 8 oz Halloumi cheese (dairy)
  • 3 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Cut the 1 medium cucumber, 2 medium tomatoes, 1/2 medium red onion, and 1/2 medium green bell pepper into bite-sized pieces.
  2. 2In a large bowl, combine the cut cucumber, tomatoes, red onion, green bell pepper, and 1/2 cup Kalamata olives.
  3. 3In a small bowl, whisk together 3 tablespoons olive oil, 2 tablespoons red wine vinegar, 1 teaspoon dried oregano, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
  4. 4Pour the dressing over the salad ingredients in the large bowl and toss gently to coat everything evenly.
  5. 5Slice the 8 oz Halloumi cheese into 1/4-inch thick slices.
  6. 6Preheat your grill to medium-high heat, which is about 400-450°F (200-230°C).
  7. 7Place the halloumi slices on the preheated grill and cook for 2-3 minutes on each side, until the cheese is golden brown and has slight grill marks.
  8. 8Arrange the grilled halloumi slices on top of the prepared salad and serve immediately.
