Ingredients

  • 1.5 lbs Lamb Leg (cut into 1-inch cubes)
  • 3 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 2 teaspoons Dried Oregano
  • 3 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 8 each Wooden Skewers
  • 1 cup Plain Greek Yogurt
  • 0.5 each Cucumber
  • 2 tablespoons Fresh Dill

Instructions

  1. 1Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. 2In a bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
  3. 3Add the lamb cubes to the marinade and toss to coat. Marinate for at least 30 minutes (or up to 4 hours) in the refrigerator.
  4. 4While the lamb is marinating, prepare the tzatziki sauce. Grate the cucumber and squeeze out excess water. In a bowl, combine Greek yogurt, grated cucumber, dill, and a pinch of salt.
  5. 5Preheat grill to medium-high heat.
  6. 6Thread the marinated lamb cubes onto the skewers.
  7. 7Grill the lamb skewers for 8-10 minutes, turning occasionally, until cooked through and slightly charred. Internal temperature 145F.
  8. 8Serve the lamb souvlaki with tzatziki sauce and warm gluten-free flatbread (optional).
