Ingredients

  • 1 cup Water
  • 6 tablespoons Unsalted Butter
  • 1 cup All-Purpose Flour
  • 4 large Eggs
  • 1 1/2 cups Gruyère Cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2In a saucepan, combine water, butter, salt, and pepper. Bring to a boil over medium heat.
  3. 3Remove from heat and add flour all at once. Stir vigorously until a smooth dough forms and pulls away from the sides of the pan.
  4. 4Let the dough cool slightly, about 5 minutes.
  5. 5Add eggs one at a time, beating well after each addition until fully incorporated. The dough will look stringy at first, but will come together with continued beating.
  6. 6Stir in the Gruyère cheese.
  7. 7Transfer the dough to a piping bag or use two spoons to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. 8Bake for 25-30 minutes, or until golden brown and puffed up. Do not open the oven door during baking.
  9. 9Let cool slightly before serving.
