Ingredients

  • 1 pound Collard greens
  • 1 medium Red onion
  • 3 cloves Garlic
  • 1 teaspoon Ginger
  • 1/2 cup Vegetable broth
  • 1 block Tofu (firm or extra-firm)
  • 1/2 teaspoon Turmeric
  • 2 tablespoons Nutritional yeast
  • 2 tablespoons Olive oil

Instructions

  1. 1Wash and chop collard greens into small pieces.
  2. 2Sauté chopped red onion in olive oil until softened.
  3. 3Add minced garlic and ginger, and cook for 1 minute.
  4. 4Add collard greens and vegetable broth. Cover and simmer for 20 minutes, or until collard greens are tender.
  5. 5Crumble tofu into a separate pan. Add turmeric and nutritional yeast.
  6. 6Sauté the tofu until lightly browned and resembles cooked curds.
  7. 7Serve the gomen alongside the tofu scramble.
