Gomen (Collard Greens)

Ingredients

  • 1 pound, chopped Collard greens
  • 1 medium, chopped Onion
  • 3 cloves, minced Garlic
  • 1 teaspoon, grated Ginger
  • 1 cup Vegetable broth
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions

  1. 1Wash and chop the collard greens.
  2. 2Heat vegetable oil in a pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  3. 3Add minced garlic and grated ginger. Cook for 1 minute until fragrant.
  4. 4Add the chopped collard greens and vegetable broth. Bring to a simmer, then cover and cook for 20-25 minutes, or until the collard greens are tender.
  5. 5Season with salt and black pepper to taste. Serve hot.
