Gomen (Collard Greens)

Ingredients

  • 1 lb Collard greens
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 2 tbsp Vegetable oil
  • 1/2 tsp Salt

Instructions

  1. 1Wash and chop the collard greens into bite-sized pieces.
  2. 2Sauté the chopped onion in vegetable oil until translucent.
  3. 3Add minced garlic and ginger, and cook for 1 minute until fragrant.
  4. 4Add the collard greens and stir well.
  5. 5Cover and cook for about 20 minutes, or until the greens are tender.
  6. 6Season with salt to taste. Serve as a side dish with injera or other Ethiopian dishes.
