Ingredients

  • 2 cans Black beans
  • 1 cup Corn
  • 1 count Red bell pepper
  • 0.5 count Red onion
  • 1 count Chipotle peppers in adobo sauce
  • 0.5 cup Cornmeal
  • 1 count Egg
  • 4 count Gluten-free hamburger buns
  • 1 count Avocado
  • 0.25 cup Sour cream
  • 1 tablespoon Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Open the 2 cans of black beans, drain them, and rinse them. Place one can of the black beans into a large bowl and mash them thoroughly with a fork or potato masher.
  2. 2Finely dice the 1 red bell pepper and the 0.5 red onion. Finely mince the 1 chipotle pepper in adobo sauce.
  3. 3Add the remaining whole black beans (from the second can), the 1 cup of corn, the diced red bell pepper, the diced red onion, the minced chipotle pepper, the 0.5 cup of cornmeal, the 1 egg, the 1 teaspoon of chili powder, the 0.5 teaspoon of cumin, the 1 teaspoon of salt, and the 0.5 teaspoon of black pepper to the bowl with the mashed black beans. Mix everything together very well until it is evenly combined.
  4. 4Divide the mixture into 4 equal portions and shape each portion into a patty, about 3/4-inch thick. These are your burger patties.
  5. 5Heat the 2 tablespoons of olive oil in a large skillet over medium heat, which is about 350°F (175°C). Carefully place the 4 burger patties into the hot skillet. Cook for 5 to 7 minutes on the first side, until they are golden brown and firm to the touch. Flip the patties and cook for another 5 to 7 minutes on the second side, until they are also golden brown and heated through.
  6. 6While the burgers are cooking, prepare the avocado crema. Mash the 1 avocado in a small bowl until smooth. Stir in the 0.25 cup of sour cream and the 1 tablespoon of lime juice. Season with a pinch of salt and black pepper to your preference.
  7. 7Place the cooked black bean patties onto the 4 count gluten-free hamburger buns. Top each burger with a generous spoonful of the prepared avocado crema.
