Ingredients

  • 2 cups Basmati Rice
  • 3 cups Mixed Vegetables (carrots, peas, beans, potatoes)
  • 1 large Onion
  • 2 medium Tomato
  • 2 tablespoons Ginger-Garlic Paste
  • 1 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Cumin Seeds
  • 2 Bay Leaves
  • 3 tablespoons Vegetable Oil
  • 2 tablespoons Fresh Cilantro
  • to taste Salt

Instructions

  1. 1Rinse the 2 cups of Basmati Rice under cold running water until the water runs clear, then soak it in a bowl of water for 30 minutes.
  2. 2Place a large heavy-bottomed pot or Dutch oven over medium-high heat (375°F / 190°C). Add the 3 tablespoons of Vegetable Oil.
  3. 3Once the oil is shimmering, add the 1 teaspoon of Cumin Seeds and the 2 Bay Leaves. Sauté for 1 minute, or until the cumin seeds are fragrant and starting to sizzle.
  4. 4Add the 1 large chopped Onion and the 2 tablespoons of Ginger-Garlic Paste to the pot. Cook, stirring frequently, for 8-10 minutes, or until the onion is soft and golden brown.
  5. 5Stir in the 2 medium chopped Tomatoes, 1 teaspoon of Turmeric Powder, 1/2 teaspoon of Red Chili Powder, and 1 teaspoon of Garam Masala. Cook for 5 minutes, stirring occasionally, until the tomatoes have broken down and the mixture is fragrant.
  6. 6Add the 3 cups of Mixed Vegetables (carrots, peas, beans, potatoes) and to taste Salt. Stir well to coat the vegetables in the spice mixture and cook for 5-7 minutes, stirring often, until the vegetables begin to soften slightly.
  7. 7Drain the soaked 2 cups of Basmati Rice and add it to the pot with the vegetables. Gently mix everything together to combine.
  8. 8Pour in 4 cups of water and stir. Bring the mixture to a rolling boil over high heat, then immediately reduce the heat to low, cover the pot tightly with a lid, and simmer for 20-25 minutes, or until the rice is tender and all the water has been absorbed. Do not lift the lid during this time.
  9. 9Once the rice is cooked, remove the pot from the heat and let it stand, covered, for 10 minutes. This allows the steam to finish cooking the rice evenly. Before serving, fluff the biryani gently with a fork and garnish with the 2 tablespoons of Fresh Cilantro.
