Ingredients

  • 1 cup Red Lentils
  • 2 tbsp Olive Oil
  • 1 medium Onion
  • 1 medium Carrot
  • 2 cloves Garlic
  • 2 tbsp Tomato Paste
  • 6 cups Vegetable Broth
  • 1 tsp Dried Mint
  • 1 tsp Paprika
  • 0.5 tsp Cumin
  • 0.75 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tbsp Lemon Juice

Instructions

  1. 1Rinse the red lentils thoroughly.
  2. 2Heat olive oil in a large pot over medium heat. Add chopped onion and carrot and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. 3Stir in tomato paste, dried mint, paprika, and cumin. Cook for 1 minute, stirring constantly.
  4. 4Add rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are very soft.
  5. 5Use an immersion blender to blend the soup until smooth (optional).
  6. 6Season with salt and pepper to taste. Stir in lemon juice before serving.
