Ingredients

  • 0.5 cup Rice Flour
  • 0.5 cup Sugar
  • 4 cups Milk
  • 0.5 cup Strong Brewed Turkish Coffee
  • 1 teaspoon Vanilla Extract
  • 0.25 teaspoon Ground Cinnamon

Instructions

  1. 1In a large heavy-bottomed pot, whisk together the 0.5 cup of rice flour and the 0.5 cup of sugar until well combined.
  2. 2Gradually pour in the 4 cups of milk while whisking constantly. Continue whisking until the mixture is smooth and there are no lumps.
  3. 3Place the pot over medium heat (around 300°F or 150°C). Cook the mixture, stirring continuously with a whisk or wooden spoon, for 15 to 20 minutes. The pudding is ready when it has thickened to a creamy, pudding-like consistency and coats the back of a spoon.
  4. 4Stir in the 0.5 cup of strong brewed Turkish coffee and the 1 teaspoon of vanilla extract until fully incorporated.
  5. 5Pour the thickened pudding evenly into four individual serving dishes.
  6. 6Sprinkle the top of each pudding with the 0.25 teaspoon of ground cinnamon.
  7. 7Allow the puddings to cool at room temperature for about 15 minutes, then cover them and refrigerate for at least 2 hours to allow them to set completely before serving.
