Ingredients

  • 1.5 lbs Chicken Thighs
  • 2 tbsp Olive Oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1.5 cups Long-Grain Rice
  • 3 cups Chicken Broth
  • 0.5 cup Dried Apricots
  • 0.25 cup Raisins
  • 0.25 cup Almonds
  • 0.5 tsp Cinnamon
  • 0.25 tsp Allspice
  • 0.75 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Fresh Parsley

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add chicken thighs and brown on all sides. Remove chicken and set aside.
  2. 2Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. 3Stir in rice, cinnamon, and allspice. Cook for 1 minute, stirring constantly.
  4. 4Pour in chicken broth and bring to a boil. Reduce heat to low, return chicken to the pot, and cover. Simmer for 25-30 minutes, or until rice is cooked and liquid is absorbed.
  5. 5Stir in dried apricots, raisins, and almonds. Cover and let stand for 5 minutes.
  6. 6Fluff the rice with a fork. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
