Ingredients

  • 1 lb Potatoes
  • 1 medium Onion
  • 6 large Eggs
  • 1/2 cup Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Peel and thinly slice the potatoes and onion.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Add the potatoes and onion to the skillet and cook until they are soft and lightly browned, about 20-25 minutes, stirring occasionally.
  4. 4Drain the potatoes and onion, reserving about 2 tablespoons of the olive oil.
  5. 5Whisk the eggs with salt and pepper in a large bowl.
  6. 6Add the potatoes and onion to the bowl with the eggs and mix well.
  7. 7Heat the reserved olive oil in the same skillet over medium-low heat.
  8. 8Pour the egg and potato mixture into the skillet.
  9. 9Cook for 10-12 minutes, or until the bottom is set and lightly browned.
  10. 10Place a large plate over the skillet and carefully flip the tortilla onto the plate.
  11. 11Slide the tortilla back into the skillet and cook for another 5-7 minutes, or until the other side is set and lightly browned.
  12. 12Let cool slightly before slicing and serving.
