Ingredients

  • 2 lbs Zucchini
  • 1 medium Onion
  • 8 oz Smoked Sausage (Csabai Kolbász)
  • 1 cup Sour Cream
  • 2 tbsp Sweet Paprika
  • 1 tbsp Dried Dill
  • 2 cloves Garlic
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tbsp Tapioca Starch
  • 2 tbsp Water

Instructions

  1. 1Prepare your ingredients: dice the 2 lbs of zucchini into 1/2-inch cubes. Dice the 1 medium onion into 1/2-inch pieces. Slice the 8 oz of smoked sausage into 1/4-inch thick rounds. Mince the 2 cloves of garlic.
  2. 2Heat the 2 tbsp of olive oil in a large, heavy-bottomed pot over medium heat (350°F / 175°C). Add the diced onion and cook, stirring occasionally, for about 5 minutes, or until the onion is softened and translucent.
  3. 3Add the sliced smoked sausage to the pot with the onions. Cook for another 5 minutes, stirring occasionally, until the sausage is lightly browned.
  4. 4Stir in the 2 tbsp of sweet paprika and the minced garlic. Cook for 1 minute more, stirring constantly, until fragrant. Be careful not to burn the paprika.
  5. 5Add the diced zucchini to the pot. Stir everything together to combine. Season with the 1 tsp of salt and the 0.5 tsp of black pepper.
  6. 6Pour in enough water to almost cover the zucchini. Increase the heat to medium-high (400°F / 200°C) and bring the mixture to a simmer. Once simmering, reduce the heat to low (200°F / 95°C), cover the pot, and cook for 20-25 minutes, or until the zucchini is tender when pierced with a fork.
  7. 7In a small bowl, whisk together the 1 tbsp of tapioca starch and the 2 tbsp of water until smooth, creating a slurry. This will thicken the stew.
  8. 8Pour the tapioca starch slurry into the pot with the zucchini mixture. Stir well to combine. Bring the stew back to a gentle simmer over medium heat (300°F / 150°C) and cook for 2-3 minutes, stirring constantly, until the stew has thickened slightly.
  9. 9Remove the pot from the heat. Stir in the 1 cup of sour cream and the 1 tbsp of dried dill until fully incorporated. Taste and adjust seasoning if needed.
  10. 10Serve the gluten-free tökfözelék hot.
