Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 2 medium Tomatoes
  • 1 medium Cucumber
  • 1 cup Fresh Parsley
  • 1/2 cup Fresh Mint
  • 4 Green Onions
  • 1/4 cup Lemon Juice
  • 1/4 cup Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Rinse the quinoa under cold water.
  2. 2Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is cooked through and water is absorbed. Fluff with a fork and let cool completely.
  3. 3Dice the tomatoes and cucumber. Chop the parsley, mint, and green onions.
  4. 4In a large bowl, combine the cooled quinoa, diced tomatoes, cucumber, chopped parsley, mint, and green onions.
  5. 5In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  6. 6Pour the dressing over the salad and toss to combine. Serve immediately or chill for later.
