Ingredients

  • 1.5 lbs Pork tenderloin
  • 2 cups Pineapple chunks
  • 1 large Bell pepper (red or green)
  • 1 medium Onion
  • 1/2 cup Tapioca starch
  • 1/4 cup Cornstarch
  • 1 large Egg
  • 1/4 cup Rice vinegar
  • 1/4 cup Honey
  • 1/4 cup Ketchup
  • 2 tbsp Tamari (gluten-free soy sauce)
  • 1/2 cup Vegetable oil
  • 2 cloves Garlic

Instructions

  1. 1Cut the 1.5 lbs pork tenderloin into 1-inch cubes. In a medium bowl, combine the 1/2 cup tapioca starch and the 1/4 cup cornstarch. Add the 1 large egg and whisk until smooth. Add the pork cubes to the bowl and toss until each piece is evenly coated with the starch mixture.
  2. 2Pour the 1/2 cup vegetable oil into a large 12-inch skillet or wok. Heat the oil over medium-high heat until it shimmers, approximately 350°F (175°C). Carefully add the coated pork cubes to the hot oil in a single layer, working in batches to avoid overcrowding the pan. Fry the pork for 4-6 minutes, turning occasionally, until golden brown and crispy on all sides. Use a slotted spoon to remove the fried pork from the skillet and place it on a plate lined with paper towels to drain. Repeat with any remaining pork.
  3. 3While the pork is frying or draining, prepare the sauce. In a medium saucepan, combine the 1/4 cup rice vinegar, 1/4 cup honey, 1/4 cup ketchup, and 2 tbsp tamari. Mince the 2 cloves garlic and add them to the saucepan. Place the saucepan over medium heat and bring the mixture to a simmer. Cook for 3-5 minutes, stirring occasionally, until the sauce has slightly thickened.
  4. 4Add the 2 cups pineapple chunks, 1 large bell pepper (cut into 1-inch pieces), and 1 medium onion (cut into 1-inch pieces) to the simmering sauce. Stir well to combine. Continue to cook for 5-7 minutes, or until the vegetables are tender-crisp, meaning they are slightly softened but still have a slight bite.
  5. 5Add the cooked, crispy pork back into the saucepan with the sauce and vegetables. Toss everything together gently for 1-2 minutes, ensuring all the pork pieces are well coated with the sweet and sour sauce. Serve immediately.
