Gluten-Free Swedish Meatball Lettuce Wraps

A lighter, gluten-free take on classic Swedish meatballs served in crisp lettuce cups. Made with almond flour and served with a creamy dairy-free dill sauce.

Ingredients

  • 1 lb Ground pork
  • 1/2 cup Almond flour
  • 1 Egg
  • 1/2 cup Onion, finely chopped
  • 1/2 tsp Allspice
  • 1/4 tsp Nutmeg
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 4 oz Dairy-free cream cheese
  • 1/2 cup Dairy-free milk
  • 2 tbsp Fresh dill, chopped
  • 1 tsp Lemon juice
  • 12 Butter lettuce leaves

Instructions

  1. 1In a bowl, combine ground pork, almond flour, egg, onion, allspice, nutmeg, salt, and pepper. Mix gently until just combined.
  2. 2Form the mixture into small meatballs.
  3. 3Heat a skillet over medium heat and cook the meatballs until browned and cooked through, about 8-10 minutes.
  4. 4While the meatballs are cooking, prepare the sauce: In a small saucepan, whisk together dairy-free cream cheese and dairy-free milk over low heat until smooth.
  5. 5Stir in dill and lemon juice. Season with salt and pepper to taste.
  6. 6Serve the meatballs in butter lettuce leaves with a spoonful of dill sauce.
