Ingredients

  • 1.5 kg Potatoes
  • 500 g Kale
  • 400 g Smoked Sausage (Gluten-Free)
  • 50 g Butter
  • 120 ml Milk (Dairy or Non-Dairy)
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions

  1. 1Peel the 1.5 kg Potatoes and cut them into approximately 1-inch (2.5 cm) cubes. Place the potato cubes in a large heavy-bottomed pot, cover them with cold water by at least 1 inch (2.5 cm), and add 1 teaspoon Salt. Bring the water to a rolling boil over high heat (around 212°F / 100°C), then reduce the heat to medium and boil for 15-20 minutes, or until the potatoes are easily pierced with a fork. Carefully drain all water from the pot.
  2. 2While the potatoes are cooking, wash the 500 g Kale thoroughly. Remove any tough central stems and chop the kale leaves into approximately 1/2-inch (1.25 cm) pieces. Place the chopped kale in a separate large pot with 1/2 inch (1.25 cm) of water. Bring the water to a boil over high heat (around 212°F / 100°C), then reduce the heat to medium-low, cover the pot, and steam for 5-7 minutes until the kale is tender and bright green. Drain the kale well, pressing out any excess water.
  3. 3Slice the 400 g Smoked Sausage (Gluten-Free) into 1/4-inch (0.6 cm) thick rounds. Heat a 10-inch (25 cm) skillet over medium heat (around 325-350°F / 160-175°C). Add the sausage slices to the hot skillet and pan-fry for 3-5 minutes per side, until they are lightly browned and heated through. Remove the sausage from the skillet and set it aside.
  4. 4Return the drained, hot 1.5 kg Potatoes to the large heavy-bottomed pot. Add the 50 g Butter and 120 ml Milk (Dairy or Non-Dairy). Mash the potatoes with a potato masher until they are smooth and creamy. Stir in the cooked 500 g Kale and 1 tablespoon Dijon Mustard until well combined. Taste and adjust seasoning with additional salt or the 0.5 teaspoon Black Pepper if desired.
  5. 5Divide the stamppot evenly among four serving plates. Top each portion with the pan-fried slices of 400 g Smoked Sausage.
