Gluten-Free Speculaas Cookies

These gluten-free Speculaas cookies are spiced Dutch biscuits traditionally eaten around Sinterklaas (St. Nicholas Day).

Ingredients

  • 2 cups Gluten-free all-purpose flour blend
  • 1/2 cup Butter, cold and cubed
  • 1/2 cup Brown sugar
  • 2 tbsp Speculaas spice mix
  • 1 tsp Baking powder
  • 2 tbsp Milk

Instructions

  1. 1In a large bowl, combine gluten-free flour, brown sugar, Speculaas spice mix, and baking powder.
  2. 2Add cold, cubed butter and rub it into the gluten-free flour mixture until it resembles coarse crumbs.
  3. 3Add milk and mix until a dough forms.
  4. 4Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  5. 5Preheat oven to 350°F (175°C).
  6. 6On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
  7. 7Cut out cookies using cookie cutters.
  8. 8Place the cookies on a baking sheet lined with parchment paper.
  9. 9Bake for 10-12 minutes, or until golden brown.
  10. 10Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
