Gluten-Free Shepherd's Pie with Sweet Potato Topping

Ingredients

  • 1 lb Ground lamb
  • 1 medium Onion
  • 1 cup Carrots
  • 1 cup Peas
  • 1 cup Beef broth
  • 1 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp Rosemary
  • 2 large Sweet potatoes
  • 2 tbsp Butter
  • 1/4 cup Milk
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. 1Set your oven to preheat to 375°F (190°C).
  2. 2In a large skillet, brown the 1 lb of ground lamb over medium-high heat for 6-8 minutes, breaking it up with a spoon, until no pink remains. Carefully drain any excess fat from the skillet.
  3. 3Add the 1 medium onion (finely diced) and 1 cup of carrots (finely diced) to the skillet with the lamb. Cook over medium heat for 5 minutes, stirring occasionally, until the vegetables have softened.
  4. 4Stir in the 1 cup of peas, 1 cup of beef broth, 1 tbsp of tomato paste, 1 tbsp of Worcestershire sauce, and 1 tsp of rosemary. Bring the mixture to a gentle simmer and cook for 10 minutes, allowing the flavors to combine and the liquid to reduce slightly.
  5. 5While the lamb mixture simmers, peel the 2 large sweet potatoes and cut them into 1-inch cubes. Place the sweet potato cubes in a large pot, cover them with water, and bring to a boil over high heat. Boil for 15-20 minutes, or until the sweet potatoes are very tender when pierced easily with a fork. Carefully drain the sweet potatoes completely.
  6. 6Return the drained sweet potatoes to the pot. Add the 2 tbsp of butter and 1/4 cup of milk. Mash with a potato masher or fork until the mixture is smooth and creamy. Stir in the 1/2 tsp of salt and 1/4 tsp of pepper until well combined.
  7. 7Pour the cooked lamb mixture evenly into a 9x13 inch baking dish (or similar 2-quart oven-safe dish). Carefully spread the mashed sweet potato topping evenly over the lamb mixture, using a spoon or spatula to cover it completely.
  8. 8Place the baking dish into the preheated oven. Bake for 20-25 minutes, or until the sweet potato topping is lightly browned and the filling is bubbling around the edges.
  9. 9Carefully remove the baking dish from the oven. Let the shepherd's pie cool for 10-15 minutes before serving to allow the filling to set and prevent burns.
