Ingredients

  • about 450 g Ground Lamb
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 2 cloves Garlic
  • 2 tbsp Tomato Paste
  • 1 cup Beef Broth
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Thyme
  • 2 large Sweet Potatoes
  • 2 tbsp Butter
  • 1/4 cup Milk
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Preheat your oven to 190°C. Prepare the vegetables: peel and chop the 1 medium Onion, 2 medium Carrots, and 2 stalks Celery into 1.27 cm pieces. Mince the 2 cloves Garlic.
  2. 2In a large skillet, brown the about 450 g Ground Lamb over medium-high heat for 5-7 minutes, stirring occasionally, until no pink remains and an internal temperature of 71°C is reached. Drain any excess grease from the skillet. Add the chopped 1 medium Onion, 2 medium Carrots, and 2 stalks Celery to the skillet and cook over medium-high heat for 5-7 minutes, stirring frequently, until the vegetables have softened.
  3. 3Stir in the minced 2 cloves Garlic and 2 tbsp Tomato Paste into the skillet. Cook for 1 minute, stirring constantly, until the mixture is fragrant. Pour in the 1 cup Beef Broth and 1 tbsp Worcestershire Sauce. Add the 1 tsp Dried Thyme, 1/2 tsp Salt, and 1/4 tsp Black Pepper. Bring the mixture to a simmer over medium-high heat and cook for 10 minutes, allowing the sauce to thicken slightly.
  4. 4While the meat mixture is simmering, prepare the sweet potato topping. Peel and chop the 2 large Sweet Potatoes into 2.54 cm pieces. Place the chopped 2 large Sweet Potatoes in a large pot and cover them with water. Bring the water to a boil over high heat and cook for 15-20 minutes, until the sweet potatoes are very tender and easily pierced with a fork. Drain the sweet potatoes thoroughly, then return them to the pot and mash them with the 2 tbsp Butter and 1/4 cup Milk until smooth and creamy.
  5. 5Pour the cooked meat mixture evenly into a baking dish. Carefully spread the mashed sweet potato topping evenly over the meat mixture, ensuring it covers the entire surface. Bake in the preheated 190°C oven for 20-25 minutes, until the sweet potato topping is golden brown and the filling is visibly bubbling around the edges.
  6. 6Remove the baking dish from the oven. Let the shepherd's pie cool for 10-15 minutes before serving; this allows the filling to set and prevents burns.
