Ingredients

  • 1 lb Ground Lamb
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 2 cloves Garlic
  • 2 tbsp Tomato Paste
  • 2 cups Beef Broth
  • 1 tbsp Worcestershire Sauce (gluten-free)
  • 1 tsp Dried Thyme
  • 1 Bay Leaf
  • 1 cup Green Lentils
  • 2 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Place 1 lb ground lamb in a large skillet over medium-high heat. Cook, breaking it up with a spoon, until it is browned all over, about 5-7 minutes. Drain off any extra fat from the skillet.
  3. 3Add the 1 medium chopped onion, 2 medium chopped carrots, and 2 chopped celery stalks to the skillet with the lamb. Cook, stirring occasionally, until the vegetables have softened, about 5-7 minutes.
  4. 4Stir in the 2 minced cloves of garlic and the 2 tbsp tomato paste. Cook for 1 minute more, stirring constantly, until the garlic is fragrant.
  5. 5Pour in the 2 cups beef broth and the 1 tbsp gluten-free Worcestershire sauce. Add the 1 tsp dried thyme and the 1 bay leaf. Bring the mixture to a simmer, then reduce the heat to medium-low. Cook for 15 minutes, stirring occasionally, until the sauce has thickened slightly. Stir in the 1/2 tsp salt and 1/4 tsp black pepper. Remove and discard the bay leaf.
  6. 6While the lamb mixture is simmering, combine the 1 cup green lentils and 2 cups vegetable broth in a medium saucepan. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the lentils are tender, about 20-25 minutes. Drain any extra liquid from the lentils.
  7. 7Spread the lamb mixture evenly in the bottom of a baking dish. Spoon the cooked 1 cup green lentils over the lamb mixture, spreading them to cover completely.
  8. 8Place the baking dish in the preheated oven. Bake at 375°F (190°C) for 20-25 minutes, or until the filling is bubbling and the lentil topping is heated through.
  9. 9Let the shepherd's pie cool for 5-10 minutes before serving. This allows the filling to set slightly.
