Gluten-Free Shepherd's Pie with Cauliflower Mash

Ingredients

  • 1.5 lbs Ground lamb
  • 1 medium Onion, chopped
  • 1 cup Carrots, diced
  • 1 cup Peas, frozen
  • 1 cup Beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 large head Cauliflower florets
  • 4 tablespoons Butter
  • 1/2 cup Milk
  • to taste Salt and pepper
  • 1 tablespoon Tapioca starch

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a large 12-inch skillet, cook the 1.5 lbs ground lamb over medium-high heat, breaking it up with a spoon, until it is browned all over. Drain off any extra fat from the skillet.
  3. 3Add the chopped 1 medium onion and diced 1 cup carrots to the skillet with the lamb. Cook, stirring occasionally, for 5 to 7 minutes, or until the vegetables have softened.
  4. 4Stir in the 1 cup frozen peas, 1 cup beef broth, 2 tablespoons tomato paste, 1 tablespoon Worcestershire sauce, and 1 teaspoon dried thyme. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the skillet, and cook for 10 minutes.
  5. 5While the meat filling is simmering, place the 1 large head cauliflower florets in a pot with just enough water to cover the bottom. Cover the pot and steam over medium heat for 15 to 20 minutes, or until the cauliflower is very tender when pierced with a fork.
  6. 6Drain the steamed cauliflower very well. Transfer the cauliflower to a food processor. Add the 4 tablespoons butter and 1/2 cup milk. Process until the mixture is completely smooth and creamy. Season the cauliflower mash with salt and pepper to your liking.
  7. 7Stir the 1 tablespoon tapioca starch into the meat filling in the skillet until it is fully combined. Cook for 1 minute more, stirring constantly, until the sauce has thickened slightly. Pour the meat filling into a baking dish. Spread the seasoned cauliflower mash evenly over the top of the meat filling.
  8. 8Bake in the preheated oven for 20 to 25 minutes, or until the cauliflower mash is lightly golden brown in spots and the filling is bubbling around the edges.
  9. 9Let the shepherd's pie cool for at least 10 minutes before serving. This allows the filling to set and makes it easier to serve.
