Ingredients

  • 0.5 cup Cornmeal (fine)
  • 2 cups Milk
  • 2 tablespoons Sugar
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 1 cup Fresh Fruit (berries, apples, bananas)

Instructions

  1. 1In a medium saucepan, combine the 2 cups of milk, 2 tablespoons of sugar, 1 tablespoon of butter, and 0.25 teaspoon of salt.
  2. 2Place the medium saucepan over medium heat, which is approximately 300-325°F (150-163°C). Heat the mixture for 5-7 minutes, until small bubbles begin to form around the edges of the pan, indicating a simmer.
  3. 3While whisking constantly, slowly pour the 0.5 cup of cornmeal into the simmering milk mixture. Continue whisking for 1-2 minutes until the cornmeal is fully incorporated and no lumps are visible.
  4. 4Reduce the heat to low, approximately 200-225°F (93-107°C). Cook the pudding for 10-15 minutes, stirring constantly with a spoon or whisk, until it has thickened. The pudding is done when it coats the back of a spoon and holds its shape briefly when you stop stirring.
  5. 5Remove the saucepan from the heat. Divide the pudding evenly among four serving bowls. Top each portion with a share of the 1 cup of fresh fruit and serve immediately while the pudding is warm.
