Ingredients

  • 1.5 lbs boneless, skinless, cut into cubes Chicken thighs
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Galangal powder
  • 1 stalk minced Lemongrass
  • 3 cloves minced Garlic
  • 1 tbsp Gluten-Free Soy sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Vegetable oil
  • 1/2 cup Peanut butter
  • 1/2 cup Coconut milk
  • 1 tbsp Lime juice
  • 1 tbsp for sauce Gluten-Free Soy sauce
  • 1 tbsp Brown sugar for sauce
  • 1/2 tsp Chili flakes

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1In a bowl, combine the about 680 g boneless, skinless chicken thighs cubes with the 1 tsp Turmeric powder, 1 tsp Cumin powder, 1 tsp Coriander powder, 1/2 tsp Galangal powder, 1 stalk minced Lemongrass, 3 cloves minced Garlic, 1 tbsp Gluten-Free Soy sauce, 1 tbsp Brown sugar, and 1 tbsp Vegetable oil. Mix everything together until the chicken is evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
  2. 2Thread the marinated chicken pieces onto skewers. If using wooden skewers, soak them in water for at least 30 minutes before using to prevent burning.
  3. 3Preheat your grill to medium heat, about 190°C. Grill the chicken skewers for 6-8 minutes per side. The chicken is cooked through when it is no longer pink inside and reaches an internal temperature of 74°C.
  4. 4While the chicken is grilling, prepare the peanut sauce. In a medium saucepan over low heat, combine the 1/2 cup Peanut butter, 1/2 cup Coconut milk, 1 tbsp Lime juice, 1 tbsp for sauce Gluten-Free Soy sauce, 1 tbsp Brown sugar for sauce, and 1/2 tsp Chili flakes. Stir constantly for 3-5 minutes, until the sauce is smooth and creamy. Do not let it boil.
  5. 5Remove the grilled chicken skewers from the grill. Let them rest for 2-3 minutes before serving.
  6. 6Serve the grilled chicken satay skewers with the warm peanut sauce on the side.
