Ingredients

  • 4 6oz Salmon fillets
  • 2 tbsp White miso paste (soy-free)
  • 1 tbsp Maple syrup
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 1 clove Garlic
  • 1/2 tsp Ginger
  • 1 lb Asparagus spears
  • 1 tbsp Olive oil
  • 1 tsp Sesame seeds

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2In a small bowl, whisk together soy-free miso paste, maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger.
  3. 3Place salmon fillets on a baking sheet lined with parchment paper.
  4. 4Brush the soy-free miso glaze over the salmon fillets.
  5. 5Bake for 12-15 minutes, or until salmon is cooked through.
  6. 6While salmon is baking, toss asparagus spears with olive oil, salt, and pepper.
  7. 7Roast asparagus on a separate baking sheet for the last 10 minutes of the salmon's cooking time.
  8. 8Garnish salmon with sesame seeds before serving.
