Ingredients

  • 2 pounds Daikon Radish, shredded
  • 1 cup Rice Flour
  • 1/2 cup Tapioca Starch
  • 1/4 cup Dried Shrimp, soaked and chopped
  • 4 oz Chinese Sausage (Lap Cheong), diced
  • 4 pieces Dried Shiitake Mushrooms, soaked and diced
  • 2 tablespoons Green Onions, chopped
  • 1 cup Water
  • 1 teaspoon Salt
  • 1/2 teaspoon White Pepper
  • 2 tablespoons Cooking Oil

Instructions

  1. 1Pat the 2 pounds of shredded Daikon Radish firmly with paper towels to remove as much excess water as possible. This helps prevent a soggy cake.
  2. 2In a large bowl, whisk together the 1 cup of Rice Flour, 1/2 cup of Tapioca Starch, 1 cup of Water, 1 teaspoon of Salt, and 1/2 teaspoon of White Pepper until the mixture is completely smooth and no lumps remain.
  3. 3Heat the 2 tablespoons of Cooking Oil in a wok or large pan over medium heat (350°F / 175°C). Add the 1/4 cup of Dried Shrimp, 4 ounces of Chinese Sausage, and 4 pieces of Dried Shiitake Mushrooms. Sauté for 3-5 minutes, stirring often, until the ingredients are fragrant.
  4. 4Add the squeezed 2 pounds of shredded Daikon Radish to the wok. Cook, stirring occasionally, for about 10 minutes, or until the radish has softened.
  5. 5Pour the smooth rice flour mixture from the bowl into the wok with the radish and other ingredients. Stir continuously for 5-7 minutes over medium heat (350°F / 175°C) until the mixture thickens significantly and forms a cohesive, dough-like consistency.
  6. 6Stir in the 2 tablespoons of Green Onions until evenly distributed throughout the mixture.
  7. 7Transfer the entire mixture into a greased 9x13-inch baking dish, spreading it out evenly. Cover the dish tightly with foil.
  8. 8Steam the radish cake, covered, for 30-40 minutes over medium-high heat (375°F / 190°C). The cake is done when a toothpick inserted into the center comes out clean.
  9. 9Allow the steamed radish cake to cool completely in the baking dish for at least 1 hour. This is crucial for it to firm up and be easy to cut.
