Gluten-Free Poutine with Sweet Potato Fries

Ingredients

  • 2 large Sweet potatoes
  • 2 tablespoons Olive oil
  • 1 cup Cheese curds
  • 4 cups Beef broth
  • 2 tablespoons Cornstarch
  • 1/4 cup Cold water
  • 1 tablespoon Tamari (gluten-free soy sauce)
  • 1 teaspoon Apple cider vinegar
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C). Peel the 2 large sweet potatoes, then cut them into fry shapes, approximately 1/4-inch (0.6 cm) wide and 3-4 inches (7.5-10 cm) long. In a large bowl, toss the cut sweet potatoes with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until they are evenly coated.
  2. 2Spread the seasoned sweet potatoes in a single layer on a large baking sheet. Bake for 25-30 minutes in the preheated oven at 400°F (200°C), flipping the fries halfway through (after 12-15 minutes), until they are tender on the inside and crispy and lightly browned on the outside.
  3. 3While the fries are baking, prepare the cornstarch slurry for the gravy. In a small bowl, whisk together 2 tablespoons of cornstarch and 1/4 cup of cold water until the mixture is smooth and no lumps remain.
  4. 4Pour the 4 cups of beef broth into a medium saucepan. Place the saucepan over medium-high heat and bring the broth to a gentle simmer, where small bubbles appear around the edges of the liquid.
  5. 5Gradually whisk the cornstarch slurry into the simmering beef broth in the saucepan. Add 1 tablespoon of tamari, 1 teaspoon of apple cider vinegar, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Continue to simmer the gravy over medium heat, stirring occasionally, for 3-5 minutes, until it has thickened enough to coat the back of a spoon.
  6. 6Divide the hot, crispy sweet potato fries among four serving bowls. Immediately top each portion of fries with 1/4 cup of cheese curds (using the full 1 cup of cheese curds for all four servings), then pour the hot gravy generously over the fries and cheese curds. Serve immediately while the fries are hot and the cheese curds are beginning to melt.
