Ingredients

  • 2 lbs Potato
  • 1 medium Onion
  • 2 Egg
  • 3 tbsp Potato starch
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Vegetable oil
  • 1/2 cup Sour cream
  • 1/2 cup Applesauce

Instructions

  1. 1Grate the potatoes and onion using a box grater or food processor.
  2. 2Place the grated potatoes and onion in a clean kitchen towel or cheesecloth and squeeze out as much excess liquid as possible.
  3. 3In a bowl, combine the grated potato and onion mixture, eggs, potato starch, salt, and pepper.
  4. 4Heat vegetable oil in a large skillet over medium heat.
  5. 5Drop spoonfuls of the potato mixture into the hot oil, spreading them out slightly to form pancakes.
  6. 6Cook for 3-4 minutes per side, or until golden brown and crispy.
  7. 7Remove the potato pancakes from the skillet and drain on paper towels.
  8. 8Serve hot with sour cream or applesauce.
