Ingredients

  • 1 cup Polenta (Cornmeal)
  • 3 cups Vegetable Broth
  • 2 tsp Fresh Rosemary
  • 1/4 cup Parmesan Cheese (optional)
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1In a medium saucepan, bring the 3 cups of vegetable broth to a boil over high heat. Gradually whisk in the 1 cup of polenta (cornmeal) and the 2 tsp of fresh rosemary.
  2. 2Reduce the heat to low and continue to cook, stirring constantly with a whisk or spoon, for 18-22 minutes, until the polenta becomes very thick and pulls away from the sides of the saucepan.
  3. 3Remove the saucepan from the heat. Stir in the 1/4 cup of Parmesan cheese (if using), 1/4 tsp of the 1/2 tsp total salt, and 1/8 tsp of the 1/4 tsp total black pepper until well combined.
  4. 4Use a small portion of the 2 tbsp of olive oil (about 1/2 teaspoon) to lightly grease a 9x13-inch baking dish (or similar size). Pour the hot polenta mixture into the greased dish and spread it evenly to a thickness of about 1/2 to 3/4 inch. Let the polenta cool completely at room temperature for at least 1 hour, or refrigerate for 30 minutes, until it is firm enough to cut.
  5. 5Preheat your oven to 400°F (200°C). Once the polenta is firm, carefully invert it onto a clean cutting board. Using a sharp knife, cut the polenta into fry shapes, approximately 1/2-inch wide and 3-4 inches long.
  6. 6In a large bowl, combine the cut polenta fries with the remaining olive oil (about 1 1/2 tablespoons + 1/2 teaspoon from the 2 tbsp total), the remaining 1/4 tsp of salt, and the remaining 1/8 tsp of black pepper, tossing gently to coat all sides. Arrange the seasoned polenta fries in a single layer on a large baking sheet, ensuring they are not touching.
  7. 7Bake the polenta fries in the preheated oven at 400°F (200°C) for 25-30 minutes. Halfway through baking (after 12-15 minutes), carefully flip each fry with tongs to ensure even browning and crispiness. Continue baking until the fries are golden brown and crispy on all sides.
