Gluten-Free Placki Ziemniaczane (Potato Pancakes) with Apple Sauce

Ingredients

• about 910 g Potatoes
• 1/2 medium Onion
• 1 Egg
• 2 tbsp Potato starch
• 1 tsp Salt
• 1/2 tsp Black pepper
• 1/4 cup Olive oil
• 3 medium Apples
• 1/2 tsp Cinnamon
• 1 tbsp Lemon juice

Instructions

1. 1Peel and grate potatoes and onion. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
2. 2In a large bowl, combine grated potatoes, grated onion, egg, potato starch, salt, and pepper.
3. 3Heat olive oil in a large skillet over medium heat.
4. 4Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly.
5. 5Cook for about 3-4 minutes per side, or until golden brown and crispy.
6. 6While potato pancakes are cooking, prepare apple sauce by peeling, coring, and chopping apples.
7. 7In a saucepan, combine chopped apples, cinnamon, and lemon juice. Cook over medium heat until apples are soft and mushy.
8. 8Serve potato pancakes hot with apple sauce on the side.
