Ingredients

  • 1.5 lbs Goat Meat (Cut into chunks)
  • 6 cups Water
  • 4 tbsp Pepper Soup Spice Mix
  • 1 medium Onion
  • 2 small Scotch Bonnet Pepper
  • 1 tsp Uziza Seeds (Ground)
  • 1 tbsp Ginger (Grated)
  • 2 cloves Garlic (Minced)
  • 2 stalks Lemon Grass (Optional)
  • 1 tsp Salt

Instructions

  1. 1Wash the 1.5 lbs of goat meat thoroughly under cold running water. Place the cleaned goat meat into a large, heavy-bottomed pot.
  2. 2Add 6 cups of water to the pot. Measure and add the 4 tbsp of pepper soup spice mix, the 1 medium onion (chopped), the 2 small scotch bonnet peppers (whole or sliced, depending on desired heat), the 1 tsp of ground uziza seeds, the 1 tbsp of grated ginger, the 2 cloves of minced garlic, and the 2 stalks of lemon grass (if using).
  3. 3Place the pot over high heat and bring the liquid to a rolling boil. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer gently for 1 hour to 1 hour and 30 minutes. The goat meat is ready when it is very tender and easily pierced with a fork. The broth should be fragrant and deeply flavored.
  4. 4Carefully remove the 2 stalks of lemon grass from the pot, if you added them. Stir in the 1 tsp of salt.
  5. 5Serve the hot soup in individual bowls. Ensure each bowl has tender pieces of goat meat and flavorful broth.
