Ingredients

  • 4 cups Cooked White Rice (day-old)
  • 2 cups Mixed Vegetables (peas, carrots, corn)
  • 1 cup Cooked Chicken (diced)
  • 1/2 cup Shrimp (cooked, peeled and deveined)
  • 2 large Eggs (scrambled)
  • 1/2 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 3 tbsp Vegetable Oil
  • 1 tsp Curry Powder
  • 1/2 tsp Thyme
  • 1/2 tsp Salt
  • 1/4 tsp White Pepper
  • 2 tbsp Gluten-Free Soy Sauce

Instructions

  1. 1Place a 12-inch wok or a large frying pan over medium-high heat, which is approximately 375°F (190°C). Add the 3 tablespoons of vegetable oil to the pan and allow it to heat for 1-2 minutes until it shimmers slightly.
  2. 2Add the 1/2 medium diced onion and the 2 cloves of minced garlic to the hot oil. Sauté them for 1-2 minutes, stirring constantly, until they become fragrant and slightly softened.
  3. 3Stir in the 2 cups of mixed vegetables (peas, carrots, corn). Continue to stir-fry for 3-4 minutes until the vegetables are tender-crisp, meaning they still have a slight bite.
  4. 4Add the 1 cup of diced cooked chicken and the 1/2 cup of cooked, peeled, and deveined shrimp to the wok. Stir-fry for another 2-3 minutes, ensuring the chicken and shrimp are thoroughly heated through.
  5. 5Push all the ingredients to one side of the wok, creating an empty space. Pour the 2 large scrambled eggs into the empty side. Cook the eggs without stirring for about 1 minute until they are mostly set, then use your spatula to gently break them into smaller pieces and mix them with the other ingredients in the wok.
  6. 6Add the 4 cups of day-old cooked white rice to the wok. Sprinkle in the 1 teaspoon of curry powder, 1/2 teaspoon of thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of white pepper over the rice. Stir everything together for 2-3 minutes to evenly distribute the seasonings and heat the rice through.
  7. 7Pour the 2 tablespoons of gluten-free soy sauce over the rice mixture. Stir-fry for another 2-3 minutes, ensuring all ingredients are thoroughly combined and heated through.
