Gluten-Free Nasi Lemak with Coconut Rice

Ingredients

  • 2 cups Long-grain rice
  • 4 cups Coconut milk
  • 2 Pandan leaves
  • 8 Chicken drumsticks
  • 1 cup Gluten-free flour
  • 2 tbsp Spices (turmeric, paprika, garlic powder, etc.)
  • 1 large Egg
  • 2 cups Vegetable oil
  • 1 Cucumber
  • 0.25 cup Anchovies (ikan bilis)
  • 2 tbsp Sambal oelek (chili paste)

Instructions

  1. 1Measure 2 cups of long-grain rice into a fine-mesh sieve and rinse thoroughly under cold running water until the water runs clear. Combine the rinsed 2 cups of long-grain rice, 4 cups of coconut milk, and 2 pandan leaves in a medium saucepan. Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to low, cover the saucepan, and simmer for 20-25 minutes, or until the coconut milk has been absorbed and the rice is tender. Remove the pandan leaves before serving.
  2. 2While the rice is cooking, prepare the chicken. Place the 8 chicken drumsticks in a bowl and sprinkle them with the 2 tablespoons of spices. In a separate shallow dish, whisk the 1 large egg. Place 1 cup of gluten-free flour in another shallow dish. Dip each seasoned chicken drumstick first into the beaten egg, ensuring it is fully coated, then dredge it in the 1 cup of gluten-free flour, pressing gently to adhere.
  3. 3Heat 2 cups of vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat until it reaches 350°F (175°C). Carefully place the floured chicken drumsticks into the hot oil, ensuring not to overcrowd the pot (fry in batches if necessary). Fry the chicken for 12-15 minutes, turning occasionally, until it is golden brown and the internal temperature reaches 165°F (74°C). Use a slotted spoon to transfer the cooked chicken drumsticks to a plate lined with paper towels to drain excess oil.
  4. 4In the same pot with the remaining hot oil, add the 0.25 cup of anchovies. Fry for 1-2 minutes, or until they are crispy and lightly golden. Remove the anchovies with a slotted spoon and drain them on a separate plate lined with paper towels.
  5. 5Slice the 1 cucumber into thin rounds.
  6. 6To serve, spoon the cooked coconut rice onto plates. Arrange the fried chicken drumsticks alongside the rice. Garnish with the crispy anchovies and sliced cucumber. Serve immediately with the 2 tablespoons of sambal oelek on the side.
