Ingredients

  • 4 cups Cooked Rice (day-old)
  • 1 lb Chicken Breast (diced)
  • 2 large Eggs
  • 3 tbsp Tamari (gluten-free soy sauce)
  • 1 tsp Shrimp Paste (optional)
  • 2 cloves Garlic (minced)
  • 2 medium Shallots (minced)
  • 1 small Red Chili (finely chopped, adjust to taste)
  • 1/2 cup Green Onions (chopped)
  • 2 tbsp Vegetable Oil
  • 1 cup Peas and Carrots (frozen)

Instructions

  1. 1Heat 2 tablespoons of vegetable oil in a 12-inch skillet or wok over medium-high heat, which is about 375°F (190°C). Add the 1 pound of diced chicken breast and cook for 5-7 minutes, stirring occasionally, until it is browned on all sides and cooked through. The chicken is done when it reaches an internal temperature of 165°F (74°C). Remove the cooked chicken from the skillet and set it aside on a plate.
  2. 2In the same skillet, add the 2 large eggs. Scramble the eggs until they are cooked through, about 2-3 minutes. Break the scrambled eggs into smaller pieces with your spatula. Remove the scrambled eggs from the skillet and set them aside with the chicken.
  3. 3Add the 2 cloves of minced garlic, 2 minced shallots, and 1 finely chopped red chili to the skillet. Sauté for about 1 minute, stirring constantly, until the ingredients are fragrant. Be careful not to burn the garlic.
  4. 4If you are using the shrimp paste, add the 1 teaspoon of shrimp paste to the skillet now. Stir it into the garlic, shallots, and chili mixture for about 30 seconds until it is well combined and fragrant.
  5. 5Add the 4 cups of cooked rice, 3 tablespoons of tamari, and 1 cup of frozen peas and carrots to the skillet. Stir-fry everything together for 5-7 minutes, stirring frequently, until the rice is heated through and the peas and carrots are tender. The rice should be steaming and slightly separated.
  6. 6Return the cooked chicken and scrambled eggs to the skillet. Mix everything together well with the rice and vegetable mixture. Cook for another 1-2 minutes, stirring, until all ingredients are evenly heated.
  7. 7Remove the skillet from the heat. Stir in the 1/2 cup of chopped green onions. Serve the Nasi Goreng immediately.
