Ingredients

  • 2 cups Black-Eyed Peas
  • 1 medium Red Bell Pepper
  • 1/2 small Scotch Bonnet Pepper
  • 1 medium Onion
  • 1/2 cup Smoked Fish (deboned)
  • 2 tbsp Crayfish Powder
  • 2 tbsp Vegetable Oil
  • 1 cup Hot Water
  • 1 tsp Salt
  • 1 cube Seasoning Cube

Instructions

  1. 1Soak the black-eyed peas in water for at least 4 hours, or overnight. Remove the skins by rubbing the peas together.
  2. 2Blend the peeled black-eyed peas with red bell pepper, scotch bonnet pepper, and onion until smooth.
  3. 3Add the smoked fish, crayfish powder, vegetable oil, seasoning cube, and salt to the blended mixture. Mix well.
  4. 4Gradually add hot water to achieve a smooth, creamy consistency.
  5. 5Pour the mixture into small heat-safe containers or ramekins. Fill a pot with water and place the containers inside, ensuring the water level reaches halfway up the sides of the containers.
  6. 6Cover the pot and steam for about 45-60 minutes, or until the moi moi is firm.
  7. 7Remove from heat and let cool slightly before serving.
