Ingredients

  • 1 cup Glutinous Rice Flour (Mochiko)
  • 1 cup Water
  • 1/4 cup Sugar
  • 1/2 cup Kinako (Roasted Soybean Flour)
  • 2 tablespoons Sugar (for Kinako)

Instructions

  1. 1In a microwave-safe bowl, combine glutinous rice flour, water, and sugar.
  2. 2Cover with plastic wrap and microwave on high for 2 minutes. Stir well and microwave for another 1-2 minutes, or until the dough is translucent and sticky.
  3. 3While the mochi is cooking, mix kinako with 2 tablespoons of sugar in a shallow dish.
  4. 4Dust a clean surface with tapioca starch or more kinako.
  5. 5Let cool slightly, then divide into bite-sized pieces. Roll each piece into a ball and coat generously with the kinako mixture.
  6. 6Serve immediately or store in an airtight container.
