  • 4 6-ounce Salmon fillets
  • 1/4 cup Maple syrup
  • 2 tablespoons Gluten-free soy sauce (Tamari)
  • 1 tablespoon Dijon mustard
  • 2 cloves Garlic
  • 2 medium Carrots
  • 2 medium Parsnips
  • 1 large Sweet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Rosemary
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2In a small bowl, whisk together maple syrup, gluten-free soy sauce, Dijon mustard, and minced garlic.
  3. 3Peel and chop carrots, parsnips, and sweet potatoes into bite-sized pieces. Toss with olive oil, rosemary, salt, and pepper.
  4. 4Spread the vegetables in a single layer on a baking sheet.
  5. 5Place salmon fillets on a separate baking sheet lined with parchment paper.
  6. 6Brush the maple glaze over the salmon fillets.
  7. 7Bake the vegetables for 20 minutes, then add the salmon to the oven. Bake for another 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. 8Serve salmon and vegetables immediately.
