Gluten-Free Mango Sticky Rice Bites

Ingredients

  • 1 cup Glutinous Rice
  • 1 1/2 cups Water
  • 1 can Coconut Milk
  • 1/4 cup Sugar
  • 1/4 tsp Salt
  • 2 medium Mango

Instructions

  1. 1Rinse the glutinous rice and soak it in water for at least 2 hours.
  2. 2Drain the rice and cook it in a rice cooker or on the stovetop with 1 1/2 cups of water until cooked through.
  3. 3While the rice is cooking, prepare the coconut milk sauce by simmering coconut milk, sugar, and salt in a saucepan until the sugar is dissolved.
  4. 4Let the rice cool slightly and then mix it with half of the coconut milk sauce.
  5. 5Spoon small amounts of the sticky rice onto a plate.
  6. 6Top each portion with diced mango and drizzle with the remaining coconut milk sauce.
  7. 7Serve immediately.
