Ingredients

  • 1 lb Shrimp
  • 2 cups Basmati Rice
  • 1 tbsp Rice Flour
  • 1 medium Onion
  • 2 medium Tomato
  • 3 cloves Garlic
  • 1 inch Ginger
  • 2 tbsp Machboos Spice Mix
  • 2 tbsp Vegetable Oil
  • 4 cups Water
  • 2 Dried Limes
  • 1/4 cup Cilantro

Instructions

  1. 1Rinse and devein the shrimp. Lightly coat with rice flour.
  2. 2In a large pot, heat vegetable oil over medium heat. Add chopped onion and sauté until golden brown.
  3. 3Add garlic and ginger, and cook for another minute until fragrant.
  4. 4Add chopped tomatoes and machboos spice mix. Cook for 5 minutes.
  5. 5Add the coated shrimp and cook until pink.
  6. 6Add basmati rice, water, and dried limes. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the rice is cooked.
  7. 7Garnish with cilantro. Serve hot.
